The Catholic Spirit is running a meatless meal recipe contest during Lent on its Community Web site.

Those who visit the site can submit a Lenten recipe online as well as view and rate recipes that have been posted.

The Catholic Spirit will publish one of the recipes in each of its issues during Lent.

Here is this week’s featured recipe:

Crustless zucchini pie


Recipe ingredients       

1 medium onion, finely chopped
1⁄4 c. oil
1⁄4 c. grated Parmesan cheese
2 eggs (or equivalent Egg Beaters)
1 tsp. minced parsley (or Italian seasoning, if preferred)
11⁄2 c. shredded zucchini (fresh or frozen)
1⁄2 c. Bisquick baking mix
1⁄2 c. shredded cheddar cheese (Fat free cheese may be substituted)

Step-by-step cooking instructions

1. In large bowl, combine first five ingredients.
2. Stir in remaining ingredients, one by one, stirring well after each addition. Pour into a greased 9-inch pie plate.
3. Bake at 350 degrees 35-45 minutes or until toothpick inserted comes out clean.
